Coffee Chocolate Mousse Recipe

This quick and easy dessert recipe is perfect for a dinner party.
Serves 6
Ingredients
- 125g good quality dark chocolate, broken up
- 1 tablespoon strong black coffee
- 4 eggs, separated
- 1 teaspoon rum or vanilla (optional)
Method
- Melt the chocolate with the coffee in a heat-proof bowl suspended over a pot of simmering water (don’t let the bowl touch the water). Stir until smooth.
- Remove from the heat and gently stir in the egg yolks one by one, being careful to combine.
- Beat the egg whites until soft peaks form.
- Gently fold 1/3 of the egg yolks in to the chocolate mix and then fold in the rest of the whites.
- Spoon into ramekin or wine glass and refrigerate for 4 hours or overnight.
- Tip – when you are ready to serve top with a little whipped cream and some grated chocolate.
